Founded in 1819 this cask strength has very distinct characteristics, to get beneath the almost 59% alcohol, try adding a splash of room temperature water (1 - 1 at best) and it's like turning on a switch and the nose becomes a bouquet with the salty sea air leading to the palate which is light and seaweedy dry with the finish lingering lightly with the nose. |

Founded in 1823, Mortlach was the first of seven distilleries to grace Dufftown. Triple distilled and at cask strength, the flavour in its 65% alcohol comes out when cut with a splash of water, definitely a big flavoured malt, quite nutty with a long full finish. |

This is part of the oldest remaining stock from the now silent distillery, originally opened in the late 1890s near Fort William. At 62% alcohol a touch of water will stimulate this cask strength bottling, it's light and dry, firm highland malt with a quick finish. |

Hillside 25 year old |

The distillery opened in 1897 with the name Septimus Parsonage and closed in 1985. This malt was distilled in 1969 and is the oldest remaining stock. The malt is fresh, crisp and as with other malts of it's age, dry. A splash of water will definitely add character to it's 52%+ alcohol content and will even add a more malt flavour that will carry on through with the finish. |

Closed in 1983, this 1971 bottling is probably the last from a distillery that was founded in 1820, as with other cask strength malts a few drops of water will enhance the history and bring out some sweetness on the palate leading to a dry, brisk finish. |
